Hootenanny

Another fun recipe from Pinterest.  It's called Hootenanny.  Yes, Hootenanny.  The name alone made it worth trying.  It's now officially my second favorite word - next to my #1 - Doppleganger.  This recipe has also been called Oven Pancakes.



Super easy breakfast recipe - Hootenanny
Preheat oven to 425 degrees.
Melt 1/2 stick of butter in 9 x13 glass pan while doing the next part:
Mix together: 6 eggs, 1 cup milk, 1/4 tsp. salt
Once that's frothy, add in 1 cup flour, mix until blended
Pour batter in pan with melted butter.  Don't mix - you're done.
Cook for 20 - 30 minutes.  It will puff up and look dramatic.
When done, cut in pieces, serve with syrup or jelly.


Next time, I'm going to try adding cheddar cheese to the mix, to make it more savory.  I'll report back!

I've never heard it called that. Sounds like a Scottish name for what is known in't hevrest of the country as Yorkshire pudding. Traditionally cooked in a bun tin and served with roast beef.

A favourite supper dish is Toad in the Hole. Roast sausages in a baking dish. When browned, turn oven up to high and pour the batter over. Cook until risen and brown. Serve with onion gravy.

we have this every Christmas morning with a can of cherry pie filling dumped on top and call it Christmas pancake. Neither one of my (grown-up) daughters is big on sweets, but when I suggested having something else on Christmas morning they were horrified! Tradition is tradition, after all.

ive made something similar from a kids recipe book called puffy cakes...i slice up apples very thinly and put them in the glass pan (i usually use a pie plate with slightly less ingredients) to get them started cooking...really good with powdered sugar or maple syrup
