We tried a new kind of chicken last night, and I just had to share it with you. We call it "Stand Up and Take a Bow" chicken. This was the best, moistest chicken I've ever made. And, it was super easy.
You put the chicken on a wire rack ($3 at WM), and cook it on the grill with 1/2 can of liquid inside the little rack. We used a Diet Coke can half full of chicken broth. The recipe called for 1/2 can of beer, but we didn't have any. I've heard Sprite works, too.Before it goes on the grill, you coat it inside and out with olive oil, rub with seasonings (I just used salt and pepper), stand it up on the can, and put it on the grill. You don't open the grill cover at all for at least an hour. When I checked mine after the hour, it was all done! Also, you use indirect heat - which I'd never done before. That means turn on the right burner, and put the chicken on the left (unheated) burner.
We demolished it - hubby said it looked like it had been attacked by a school of piranhas. Yummy!

Yummy! Yes, I've made this several times, in the winter using my oven with the 1/2 can of beer :-) It's always so moist, and yes, it's always demolished at my house too!

Love, love, love "beer chicken." Works just as well with a can of water if you're not into beer. I like trying different spice rubs. Jamaican, Mexican, Italian, whatever your hearts content. Also, consider doing two chickens since you've got the heat going. The leftovers make great chicken tacos, salad, pasta, sandwiches, etc. I use the carcasses for soup.
Delicious! We made our first one with beer and Butt Rub. It was awesome. Today we are having some friends over and plan on 2 - one with beer and one with apple cider.
Among our guy friends its known as "beer butt" chicken! And it is very good!
